kombucha update


When I bottled my first batch of kombucha, I liked it but I didn't love it. It wasn't nearly as fizzy as I had hoped, and it had a slightly bitter flavor, reminiscent of cranberry juice.

The great news? After a couple weeks in the fridge, this stuff is awesome! While I would still like to increase the carbonation, it is decidedly fizzier and the bitterness has disappeared. The even greater news? Stephen likes it. He told me last night, "At last you make some of your healthy food stuff that I actually like!" We are wanting to increase the amount of fermented foods/good bacteria that we consume, but he isn't a fan of yogurt or fermented veggies. I am thrilled to find something that teems with enzymes and probiotics that he can really enjoy.

My second batch is bottled and in the fridge. This time, I used the double fermentation method and made one jar with strawberries, one with blueberries and one with ginger. They look beautiful and I can't wait to try them, but I want to give them a few days so that I can get the full flavor effect.

I stored my mother scoby away in a scoby hotel to use as a backup, should something go wrong with the baby that I am currently using. The last baby I tossed in the compost, but the next one I will save...I am thinking that I will need to double production soon. Philip tried drinking some the other day and he liked it too...I don't want the boys to drink much of it because of the caffeine content, but I would be thrilled if they will drink a little.

I apologize for the weird angle on the photo. I was trying to show the scoby on top and the new one growing underneath, but it's still hard to see. I had to peel them apart. And how about that terrific glass jar?! $7.00 at Wal-Mart. Can't beat that.
