easy and fun

This is my favorite go-to meal for days when I'm in a hurry or forget to thaw something for supper. Favorite salad greens plus lots of toppings plus bread or crackers. I always keep canned chickpeas on hand for a quick, easy protein. The boys love this meal because they get to fix their own plates and it makes me happy, even though they skip the greens, to see them fill up on a rainbow of veggies.

  1. This is a great idea. I am always looking for quick healthy ideas on those busy nights when we have meetings or Bible studies. Your bread looks so wonderful. Do you have a favorite recipe that you could share?

  2. Liz, I posted the recipe that I use here:

You can make it with regular whole wheat flour instead of sprouted flour, and you can play with the ratio of white to whole wheat as well. It's a pretty forgiving recipe.
